6 finely chopped scallions or green onions – be sure to use the green parts
4 tablespoons of butter
1 teaspoon salt
1 teaspoon pepper

Instructions
Put rice and water with salt in a saucepan over medium heat and bring to a boil. Cover, turn down heat to simmer for 10 minutes.
Mix chopped green onions, butter and pepper in the partially cooked rice, stir, cover, and put back on simmer for 6-8 more minutes until rice is cooked.
Stir and serve.
