This fragrant rice dish includes fresh herbs and veggies and is a wonderful accompaniment for stews, or as a side. Despite the traditional name “dirty rice” is actually a light and crisp white rice dish with greens.
- Ingredients
- 2 cups of rice
- 4 cups of water
- 6 finely chopped scallions or green onions – be sure to use the green parts
- 4 tablespoons of butter
- 1 teaspoon salt
- 1 teaspoon pepper
- Directions
- Put rice and water with salt in a saucepan over medium heat and bring to a boil. Cover, turn down heat to simmer for 10 minutes.
- Mix chopped green onions, butter and pepper in the partially cooked rice, stir, cover, and put back on simmer for 6-8 more minutes until rice is cooked.
- Stir and serve.

This recipe for vegetarian dirty rice is a fun way to put a different twist on plain white rice and on the more traditional dirty rice. The herbs that you put into the pot add a touch of extra flavor and can complement the accompanying dish whether it is a stew or as a side dish at a barbecue. I like to serve this with chili, ribs or roasted chicken.
Why is this white rice dish called dirty rice?
Dirty rice is named because of the appearance that the rice takes on when cooked with the herbs, greens and meat and is a classic southern dish. I took the meat out, because I love how light the rice is when cooked this way – making it my own.
